Latik, is a classic delicacy of Filipino that was made from the mixture of coconut
milk and Panutsa (sugar block), has an important part in the traditional cuisine that is
particularly a part of kakanin (native rice delicacy). Aside from the cultural significance,
the traditional preparation was labor-intensive, time consuming, and had inconsistent
results. This study makes a design and fabrication of the Semi-Automated Portable Latik
Making Machine (SAPLMM), aiming for home-based and large-scale production. On the
integration of motor, paddle agitator, stainless steel containers and control system, the
study aims to lessen the manual labor, decrease the timeframe of the machine cooked, and
improve consistency
The design of the machine was made to cook 10 liters of caramelized coconut syrup
within an hour. However, the timeframe on the testing did not meet the required timeframe
instead it was cooked at an average time of two and a half hours due to the low capacity of
heating element. Regardless of this limitation, prototype lessens the manual labor, and the
consistency of Latik was uniform by the texture and color of it. On the other hand, the
performance evaluation shows moderate acceptability in terms of user-friendliness and
economic viability, this suggests that the machine has potential for developing the small-
scale business and improving the way it was cooked.
