The design and fabrication of a chicken feet descaling machine exclusively for
small scale poultry processing vendors is presented in this paper. The manual
scaling/cleaning of chicken feet is inefficient and laborious as well as inconsistent for
small operators. To remedy this situation, designing and fabrication of chicken feet
descaling machine for poultry processors in small business scale was the objective of
the study. The machine includes a rotating plate capable of rotating at around 860
RPM, a descaling chamber with rubber fingers, a water spray system that removes
scales, and a frame. Speed, productivity, decalling efficiency, user friendliness, safety
and economic assessments were used for performance tests.
The experimental results indicated that the rotating plate could reach the average
speed of 857.8 RPM without load, which is consistent with the design requirement.
The average production was determined as 1.7022 kg/min, and descaling was 100%
in two out of three trials and 96.88% in the other. The quality of chicken feet was
excellent with no strong visual damage being noticeable. User feedback indicated
very good ease of use (scores 4.0-5.0), albeit slightly lower for safety (3.3-4.3); and
the need for better automatic safety features. Financially, the machine provided a
good investment, 72.46% ROI and growing earning possibilities.
In conclusion, the fabricated chicken feet descaling machine successfully met the
objectives of the study, providing a reliable, efficient, and economically viable
alternative to manual descaling processes for small-scale poultry vendors.
