The traditional sun drying of Ayungin fish (Leiopotherapon plumbeus) is susceptible to weather conditions, time-consuming, and poses sanitation challenges, thereby affecting the consistency and safety of the dried fish product. This Prototype addresses the stated problem by design, fabrication, test, and evaluation of a fish brining and drying machine. For continuous and sanitized drying of Ayungin, the system consists of an enclosed structure that incorporates a brining chamber, heating components, controlled air circulation, and vertical trays. Additionally, for the safety of the operator, the machine is equipped with a fault protection feature, such as an emergency button. Mainly, the machine can process 1000 pieces of Ayungin at 60°C for 3 hours and 46 minutes of drying, and the machine produced 942 out of 1000 pieces of dried fish, with an efficiency of 94%. The Test also shows the machine can achieve a higher total moisture loss of 30%, compared to 12% with traditional sun drying. The prototype was evaluated by thirty (30) respondents using the TUP evaluation form and received an overall rating of 4.51, which is equivalent to very good. This proves the efficiency and safety of the prototype compared to traditional sun drying.
