520 _aLongganisa is a popular processed meat made by Filipinos, usually eaten with rice in Filipino households. Despite this, small businesses do not produce them since making it requires using separate equipment that are operated manually and consumes unnecessary time and energy. The main objective of this study is to produce a semi-automated longganisa- making machine. The machine will contain the four sections of the longganisa production: grinding, mixing, stuffing, and cutting. The arrangement of sections is based on the traditional procedures of longganisa making. The researchers aim to improve the production time of making longganisa and to develop a machine that is economical, efficient, and sustainable. The machine was tested based on the performance of individual sections such as the output of the meat produced by the grinder, time it consumed by the mixer to produce the required mixture consistency, output and quality of the stuffed mixture, and the output of the cutter. Data gathered during the test showed that the machine can produce 10 kilograms worth of longganisa in 29:34 minutes. The grinder was able to grind 6 kilos of meat in 4:04 minutes, the mixing process took 2 minutes to produce the needed consistency for the mixture, the stuffer could stuff the mixture into the casing in 48 seconds, and the cutter was able to cut 10kg worth of longganisa in 14:36 minutes. The grinder exhibits an efficiency of 98.33%, the mixer demonstrates an efficiency of 99.49%, and the stuffer showcases an efficiency of 94.92%. The overall efficiency of the entire machine is calculated at 97.58%. The semi-automated longganisa machine is an efficient machine that will be beneficial to small scale longganisa makers in the Philippine market.
