This study focuses on the development of a carbonated drink utilizing an underutilized
fruit, specifically lipote fruit. The objective is to formulate a carbonated beverage that
incorporates the unique characteristics of lipote fruit. This study focuses on the formulation
of a product aimed at applying and optimizing the complete capabilities and potential uses
of lipote. This study directed us to submit the final product to Intertek Quality Assured in
order to conduct a series of tests such as Microbial analysis, namely; Standard Pour Plate,
Escherichia coli, and Yeast & Mold. This study also focuses on the Chemical Analysis of
an end product, specifically examining its pH value and Color. This study considered its
compliance with the FDA 21 CFR Part 114 Standard. The results of a microbial analysis
conducted using the Standard Pour Plate resulted to <10. The results revealed that Lipote
Carbonated Drink has a pH value of 2.54, which meets the established regulatory
requirements. The analysis revealed the presence of Escherichia Coli,
is negative. Additionally, the study identified the presence of Yeast and Mold, with a result
of <1 which indicate that the product is safe for consumption and does not pose any adverse
effects on consumers and evaluators. The bottle is constructed from Polyethylene
terephthalate (PET), with a specific net weight of 190mL. The characteristics of the
secondary packaging utilized in the form of a rectangular box made from carton material
with 270 gsm. There are 30 students from the Department of Food and Technology at the
Technological University of the Philippines who acted as the evaluators. The present
investigation aimed to assess the acceptability of the product through the utilization of the
9-Point Hedonic scale. The research presented here conveys the overall result of the
evaluation as "Like Extremely." To put it simply, Lipote Carbonated Drink is safe to
consume and a widely accepted beverage that can be introduced to the market.
