Dissertation note: College of Industrial Technology.-- Bachelor of Science in Food Technology: Technological University of the Philippines , Manila. 2019 Summary: The study, Development of Lipote Juice Drink, aims to formulate a new variety of juice using Lipote fruit. The product was made from Lipote, an indigenous fruit found in areas of Southern Luzon. Lipote Juice drink underwent a series of formulation food processing technology such as: extraction, concentration, and pasteurization. Likewise, the tools and ingredients used were locally available and affordable material. In addition, Lipote Juice Drink underwent a series of analysis namely: Proximate and Microbial Analysis. Apparently, there was no detection of pathogenic bacteria. Furthermore, to maintain the stability of the Lipote juice drink, it underwent stability analysis and the result showed that it can last for two months. Moreover, the packaging used was a clear glass bottle and has a capacity of 250 milliliters. In addition, to maintain the quality of the product, it is best served when chilled and must be shaken well before drinking. Hence, the color and taste of Lipote Juice Drink may vary from time to time because of the fruit. The Evaluation Result shows got a mean score of 4.0 with the descriptive meaning of "Very Acceptable". Therefore, the researcher concluded that the Lipote Juice Drink proves that this can be a new variety of juice.
