The Katmon (Dillenia Philippinensis) is a wildcrafted fruit that contains phytonutrients,
and considered rare in the Philippines. The study Development of Powdered Juice using
Katmon Fruit is a powder drink mix with a natural flavor of the fruit. Nowadays
powdered juice drink is universally consumed by many because of convenience.
Furthermore, Katmon Powder Juice drink underwent series of formulation to achieve the
right taste and texture of the powder juice drink available in the market. The major
processes was extraction and spray drying. In addition, the product underwent proximate
analysis and resulted 9g of total sugar, 0.46g of protein and 2.95g of calcium. Moreover,
the result of the microbial analysis is proof that the product is safe to consume. In
addition, the product was evaluated by 50 respondents using a 9-point hedonic scale
rating. Results shows that the Katmon Juice Drink got a mean score of 6.98 for
appearance, 6.28 for aroma, 7.22 for texture, and 6.56 for flavor and gained the general
acceptability of 7.28 with the descriptive rating of “Like Moderately”. The researchers,
therefore, conclude that the Katmon Juice Drink can be a new variety and potentially
produced juice drink.
