The study, Development of Ready to Drink Adlai Coffee aimed to provide a new variety of coffee and a convenient beverage that can give a lot of benefits and nutrients to consumers using Adlai grains. The raw materials used in making Adlai ready to drink coffee is Adlai grains an indigenous staple food found in Southern Mindanao. Furthermore, Adlai ready to drink Adlai coffee underwent through a series of formulating and processing to attain the ready to drink coffee. The process used was roasting, grinding, sifting, and brewing. Moreover, ready to Drink Coffee underwent through series of analysis such as proximate, microbial, nutritional, and stability test to ensure the safety of the product consumption. In addition, the product packaging is a glass bottle with a lid and has a measurement of 300 milliliters. The Ready to Drink Coffee using Adlai Rice was evaluated by 30 respondents composed of food professionals /baristas, students, and coffee lovers. The evaluation result shown got a mean score of 4.14 with the descriptive meaning of "Acceptable" therefore, the researcher concluded that the Ready to Drink Coffee using Adlai rice proves could be viable alternative to coffee.
